We've been using mostly Ruby and Rails, but Merb looks great in some cases.
Another another side note, while Netbeans has great Ruby support, the best thing about dynamic languages is I don't have to get bogged down by a slow IDE (I'm looking at you Eclipse). I love just using Textmate/UltraEdit.
